While I enjoy cooking and exploring new cuisines, I’m totally okay with eating the same thing 4 days in a row. Cook a huge batch once, and then call it a day. It might be laziness, it might be my reluctance towards cleaning dishes (thank gawd for my husband), but coming home to an already cooked meal is the definition of #ultimatelifegoals.
And my favorite on-repeat meal is…
One meal that I have on repeat is my Kale and Sweet Potato Curry. Eating this dish is like a hug to my belly (and you know I love hugs). I mean, can you think of a combination more heavenly than kale and sweet potato? I know I can’t!
It’s soothing. It’s flavorful. And it’s super packed with nutrients. (click here to learn more about which foods are rich in vitamins) Who says healthy can’t taste great?
I’m not sure where I picked up the original recipe, but over the past 2 year, I’ve been tweaking it to give me this comforting and healthy recipe you’ll find below. Disclosure: I am a imprecise throw-it-in-and-see-what-it-taste-like kind of cook. The quantities that I have included in the recipe are an approximate and I encourage you to adjust according to taste (isn’t that the beauty of savory dishes?). Bon appétit!
